The History
 
Lavender, believed to have originated in the Middle East, Mediterranean, and India, has been cherished for over 2,500 years. The name "lavender" comes from the Latin word lavare, meaning "to wash," hinting at how the ancient Romans used the plant to scent everything from their beds to their baths, clothes, and hair.
 
The Romans also recognized lavender's calming and antiseptic properties, using it in baths and even consuming it to alleviate headaches, sore throats, and indigestion. In the 16th century, English herbalist John Parkinson praised lavender as a remedy for head pains, while French King Charles VI insisted that having lavender in his pillow was the key to a good night's sleep—a practice still in use today.
 
Lavender's culinary influence has grown over time. Queen Elizabeth I enjoyed lavender jam, and it was a key ingredient in tea drinks with both medicinal and flavor benefits. It wasn’t until the 1970s, however, that lavender became widely known as a culinary ingredient, particularly after it was included in the herbes de Provence blend.
